And in my book, anything that feeds your soul counts as soul food. THEREFORE, brunch = soul food.


I love making Sunday Brunch at home for friends. It saves us a lot of money, we don't have to put fresh clothes on or sit up straight, and Nextflix and Hulu stays on. It's intimate, yet extremely casual and I love it.
Today, I decided to treat the boys to a super simple and extremely easy to make French Toast Bake, along with some heat-and-serve sausage links and scrambled eggs with monterrey jack cheese melthed on top.
This French Toast Bake took no time to put together, gave us time to chill and sip our coffee, and was ready at the same time as the eggs and sausage. Instead of having to serve everyone as the slices of french toast came off the griddle and ending up eating as everyone else is finishing their plate, I was able to serve everyone all at the same time. EVERYONE WINS :)
This Sunday Brunch was also extremely affordable. My friends and I are all pretty young and are just getting on our feet, so cooking at home really saves our wallets for more important things like rent and cat food. This is a great recipe that feels fancy, but is actually cheap as hell. College students, I'm looking at you...
Let me break it down for ya:
Loaf of French Bread $1
A Dozen Eggs $1.69
Frozen Breakfast Sausage Links >$2
Shredded Monterrey Jack Cheese >$2
Plus I had a few staples at home, like butter, milk, cinnamon, maple syrup, and vanilla extract, so I saved some money there, too. So basically, 4 people ate for under $10. HELL YEAH! Recipe Below is just for the French Toast Bake.
Simple & Easy French Toast Bake
Prep Time: 5 min - Cook Time: 40 min
Serves 4
Ingredients:
1 Loaf of French Bread
3 Large Eggs
1/2 Cup Whole Milk
2 Tablespoons Maple Syrup
2 Teaspoons Vanilla Extract
2 Teaspoons Ground Cinnamon
A Small Pinch of Salt (I like Himalayan Pink Salt)
1/2 Cup Light Brown Sugar
1 Tablespoons Butter
Plus Powdered Sugar and Maple Syrup for toppings.
Directions:
Preheat over to 350 degrees Farenheit
Cut the loaf of french bread into 8 slices each about an inch thick (setting the heels aside to turn into bread crumbs later, if you're into that..).
In a big mixing bowl, add the eggs, milk, maple syrup, vanilla extract, and cinnamon, and whisk until it's all combined pretty well.
Use 1/3 of the butter and use a paper towel to grease the inside of a 9x9 inch square glass baking dish.
Sprinkle 1/3 of the brown sugar over the bottom of the baking dish.
Dip and flip each slice of bread into the egg mixture and arrange the slices in the baking dish.
Sprinkle remining brown sugar ocer the top of the slices
Pour any remaining egg mixture over the top of the slices
Bake for 40 minutes, until golden brown.
Let it cool a little before topping with powdered sugar and maple syrup and serving!
